Lovely, ripe red bell peppers from the Fraser Valley are roasted, skinned and seeded, then finely chopped and cooked with hot Thai chili peppers, freshly squeezed lemon juice and sugar to produce this spicy hot jelly. It’s a perfect accompaniment for hot or cold roasted chicken or turkey.
